Evangelina Abundis Ruvalcaba
About Me
Evangelina Abundis Ruvalcaba was born on La Higuera ranch in Ixtlahuacán del Río, Jalisco. The tenth of eleven siblings, she emigrated in November 1996 to Grand Rapids, Michigan, with her husband, Oswaldo, and their eldest daughter, Paola. Later, two more sons joined the family: Brandon and Kevin.
After her husband lost his job in 2004, Evangelina turned necessity into opportunity by launching a small food stand with him at a flea market. There, she introduced recipes from her hometown, most notably her unique “quesabirrias”. Thanks to this authentic offering, in 2016 they founded “El Globo Mexican Restaurant” on Division Avenue, a space infused with Jalisco roots that blends tradition and professionalism.
Just a year later, in 2017, the City of Grand Rapids recognized it as the best neighborhood restaurant. Shortly afterward, the Alas Latinas association honored Evangelina for her culinary contributions to the community, highlighting her innovation and quality. As her business grew, Evangelina gained new skills that allowed her to expand into catering and launch her first food truck, “El Globo Móvil”.
Her leadership reached beyond the kitchen, and in 2024, she was named one of the 25 most influential people in West Michigan, an honor that celebrated her impact as an immigrant and entrepreneur. In January 2025, she celebrated the grand opening of a second location on E. Beltline Avenue, where Senator Mark E. Huizenga recognized her for her contributions to the Michigan community. Her businesses have also generated employment opportunities for other immigrants.
Together with her husband, she actively participates in fairs, cultural events, and school activities, establishing “El Globo” as a true bridge between cultures.
